The lamb breast meat is gotten from the part around the belly region above the forelegs of the lamb. It is usually heavily worked whenever the animals move or are in motion and so tends to be a not so tender part. It contains a lot of cartilage and some connective tissues. It is one of those few lamb parts which need to be cooked in low or moist heat and with the slow cooking method. The use of this method helps the flavours in the lamb breast to be fully developed and allows you to enjoy the taste that comes from eating it. It is a fairly fatty piece of meat and when slow cooked, some of the fat does tend to melt off.
